Finca El Río

Origin

Farm El Río or the river is in Totutla, Huitzilan de Serdán Puebla at 1,100 meters above sea level.

History

Since 2001, We have dedicated ourselves to improve our farm. I am the third generation in the coffee family; my mother always taught us to work with love and to give our best. In 2015, together with my husband, we decided to renew 70% of the plantation with marsellesa because we had Typica with ages of more than 30 years.

Special Characteristics

We manage the selective cutting of mature cherries, water care and drying through African beds. Families from the surrounding communities work on the farm and there is a great biodiversity of trees such as: peaches, oranges, limes, lemons, chalahuites, pahua, bananas that help us maintain shade and contribute to the environment.

We are currently working with innovations in the processes, handling, harvesting and processing of coffee with the aim of improving cup quality.                                                                         

The love for coffee production has been transmitted from generation to generation.

We give special treatment to coffee to all traceability from plant to selective production with mainly ripe fruits that provide a high quantity of sugars measured in °brix. For this lot, we did a pre fermentation at rest in drupe anaerobic fermentation for 48 hours and after pulping, 60 hours of anaerobic fermentation was carried out. We dried the coffee in african beds.

We store our coffee in GrainPro plastic bags and in a dark room. To conserve the soil of the farm we grow living barriers. We transport the coffee cherries harvest to our beneficio with mules’ animals and horses.
